Southbridge Hotel is the meeting place for the salmon fishing competitions, and offers free overnight parking in their off-road carpark.
This is a great location if you are competing in the fishing competitions, but not so interesting if you're just exploring Canterbury. Of course there is always the option of a hot pub meal, which would be a good enough reason to park overnight.
You should check in at the hotel reception if you're planning to stay overnight.
